Baked Oaty Brekky Bar
This Brekky Bar is a lifesaver when it comes to breakfast on the go!
Super tasty, quick & easy to make and can be frozen to be made in advance and grab and go!

INGREDIENTS
· 2 cups rolled oats
· 1 cup whole meal self-raising flour
· Large handful of almonds
· 3⁄4 cup coconut
· 1 handful dates, chopped roughly
· 1 teaspoon baking powder
· 1 teaspoon of cinnamon
· ½ teaspoon nutmeg
· 2eggs
· 1 ¾ cup of milk of choice
· 2 tablespoons olive oil
· 2 cups frozen or fresh berries
Optional Toppings: milk/dark chocolate OR nut butter.
METHOD:
1. Preheat oven to 190°C and line a rectangular baking dish with baking paper.
2. In a medium mixing bowl, combine all of the dry ingredients.
3. In a separate bowl, whisk the eggs and then add the milk and oil. Mix to combine.
4. Pour the wet ingredients into the dry mixture and stir (the mixture will be quite runny – this is normal).
5. Mix through the berries to combine.
6. Pour the mixture into a lined baking tray and bake for 30-45 minutes or until cooked through and golden
7. Let it cool for 10 minutes and drizzle with melted chocolate or peanut butter! Then place in fridge until topping sets.
8. Cut into 8 squares
TIP: I cut mine into squares and seperately package to take to work for breakfast on the go! The slices will also freeze well and then take out of the freezer the night before to defrost for the morning.
Serve warm or cold.
